Creamy Veggie Soup

Okay, soo I've been in a soupy type of mood because of the icky, rainy weather lately :) & I stumbled upon this soup recipe. If you like anything cheesy, creamy, and with veggies, THIS is the way to go! Hope you like it , here's my version of Creamy Veggie Soup:

Creamy Veggie Soup 


Ingredients:
1 3/4 cups of chicken broth
1small onion, diced
1/3 cup all purpose flour
1/4cup(4tps) of butter
1/2 tps of pepper
1/2 tps of salt
2 cups of milk
2 1/2 cup shredded cheddar jack mix
3 cups chopped, steamed of carrots, cauliflower, broccoli, peas(& any other veggies you like)
Directions:
1) Cook the veggies in a glass bowl, covered in saran wrap in the microwave for 3minutes and 30seconds while you get the soup ready
2)Cook the chicken broth and chopped union in a small saucepan for about 15 minutes
3) heat the milk in a medium sized glass bowl for about 1-2 minutes
3)in another medium sized bowl, melt the butter, then add flour, and salt&pepper. Cook while stirring constantly, for about 2 minutes, then whisk in warmed milk.

4) pour the milk and butter mix into the onion and chicken broth mix, and stir on medium heat for about 8 minutes, or until the soup is thickened.

5)Add cheeses to the soup and stir until cheese has melted. Stir in veggies and add more salt and pepper to taste, if needed. If the soup is too thick, you can whisk in some more milk or chicken broth. OR if it's too thin, you can still simmer the soup a bit longer til it thickens up.
